Easy Spaghetti CARBONARA | Healthy Dinner Recipes
I hope you guys have been enjoying a self-love February so far, I’ve had so much fun creating videos based on different themes each month. Well, I mean last month and this month, but I’m really excited for March already.

And I’m really excited about today’s recipe because we are bringing in bacon. I don’t know if on bacon before in Health Nut Kitchen, but I love bacon. I feel like it’s one of those. I don’t even wanna say it’s something I indulge in. Like, if I want bacon, I eat bacon, and I don’t overthink it.
So for today’s dish, it’s a brussel sprout carbonara pasta dish with bacon, because I feel just like peanut butter and jelly go together, Brussel sprouts and bacon go together, and I feel like they’re match made in heaven, so I had to add them to today’s dish.
So let’s just hop right in and I will show you guys how easy is this is to wrap up.
For this recipe, you will need brussels sprouts, brown rice spaghetti, bacon, cashews, white wine, garlic, onion, lemon juice, water, parsley, and for spices, you ‘ll need some smoked paprika, black pepper, and sea salt.
First, we’re gonna make the cream base for our sauce. In a high-speed blender, add in water, garlic, lemon juice, your spices, cashews, and blend. Next, heat up a large skillet on low to medium heat and start sauteing your chopped bacon.
Just make sure you keep stirring them around so your bacon does not burn. You don’t need to add any oil or water because the bacon is going to let out a lot of oil. Saute for about three minutes and then add in your chopped onion.
Give it a stir and saute for another five or so minutes until your bacon is nice and crispy. While your bacon is crisping up, you can get a large pot of water to a boil and then toss in your chopped up Brussels sprouts.
I just like to boil these for about 10 minutes.
I don’t want to overcook them or else they get too soggy.
Then you’ll need another pot of boiling water to cook your rice in.
You can use any rice that you want, I’m using brown rice, so this one needs only like seven to 10 minutes to cook.
Make sure that you reserve about two ladles worth of the pasta water for us to use later for our sauce.
Now that our bacon is nice and crispy, you can go ahead and toss that cooked pasta.
If you’re using brown rice pasta, make sure that you rinse and drain it before adding it into the bacon. Drizzle on your cream sauce that we made earlier, and give everything a quick toss. Add in your white wine, and then ladle in that pasta water that we reserved earlier. Add in your boiled Brussel sprouts.
Just make sure that you keep tossing everything together so that the bottom doesn’t burn, and that everything just kind of thickens up together.
Garnish with some freshly chopped parsley.
And you know I had to serve myself a nice, big helping of this delicious pasta, and I basically ate this for breakfast, lunch, and dinner when Chloe and I filmed this video.
And that’s how easy it is, guys.
Super delicious, perfect for Valentine’s Day, dairy free, gluten free, and delicious.
I can almost guarantee you won’t have a bloated belly after you eat this delicious dish.

It’s so delicious, and it’shards not to nibbling on it as you’re making it.
